MAYO ROASTED CHICKEN

O COOKING METHOD
1 Preheat the oven to 220°C. Pat chicken dry with
paper towels.
5 Place the chicken on top of the lemons and
potatoes. Roast in the preheated oven for 20
minutes, remove from the oven and baste the
chicken with half of the mayonnaise mixture.
Return to oven for another 20 minutes. Once

temperature is reached. Roast
until it is no longer pink at
the bone and the juices run
clear. Let stand for 5
minutes before serving.
2 tsp Worcestershire sauce
4 tsp ground cayenne pepper
4 Add mayonnaise, vinegar, honey,
Worcestershire, and cayenne to the lemon zest;
mix to combine. Rub half of the mayonnaise
mixture evenly all over the chicken and
underneath the skin over the breast. Sprinkle
chicken evenly with salt and pepper.
